Our Father’s Day

Our Father's Day

Sunday is the day we spend worshiping the Lord from 10am to 5pm. But Sunday is the hardest day of the week for me. It is when all my discomforts come in full force and the intensity of physical suffering is multiplied fourfold (or more, who can measure it?). Father’s Day, after husband and the kids left for Church, I settled for my live webcast viewing of our Church’s worship service, and the hard breathing came without delay. It took so long that my extremities began to numb and I became too faint I couldn’t get to open my eyes. I could hardly wait for 12 o’clock to strike so I could break my whole-morning fast.

I remembered I hadn’t greeted my husband “Happy Father’s Day”. When I finally got the strength to send my loving message through SMS, I had to shake off the thought that, will I ever see him again (and our kids)? It was always like that. That question, I have lost track of the times it has entered my mind these many years.

By the time they arrived, I was preparing the beef and cheese lasagna, doing my best to hold my head steady and not give in to dizziness. But despite my physical difficulties, I managed to set up our dinner table and give my husband a simple Father’s Day celebration. Oh, by the way, I wanted to have our family picture taken but I was unable to go beyond plucking stray eyebrows. I didn’t get to that part of changing into the new navy blue blouse that I wanted to wear for the occasion, or brush my hair, put on powder…

My tuna asparagus salad with my homemade vinaigrette.

Shrimp scampi with lemon garlic butter sauce.

Our Father's Day

My beef and cheese lasagna. To reduce the workload in just one day, I prepared the bolognese sauce the day before. This is loaded with cheddar, mozzarella, and parmesan cheeses.

Our Father's Day

We set up my mobile kitchen as our dinner table in our bedroom extension. Eating in the dining room was out of the question.

We had to stuff everything on there.

Our Father's Day

My husband jokingly asked, “What restaurant are we in?”

“Maybe Italianni’s?” I offered weakly, smiling.

Our Father's Day

My husband and father of my kids. I thank the Lord for him – faithful, steady, good provider, loving and caring.

Our Father's Day

My mango pudding. These didn’t set well. I find the recipe (from Google) at fault. I might make these again but with modifications.

Our family enjoyed all the food that I prepared. Our Father’s Day was blessed despite physical hardships. We celebrated and rejoiced in the Lord.

I might be linking up with these lovely blogs.
